Palazzo di Varignana farms the hills southeast of Bologna, where since 2015 it has planted the largest olive grove in Emilia-Romagna, all of it certified organic.

Cabianca is the estate blend: several cultivars picked and milled together for balance. Medium in fruit, bright green in the glass, a clean herbal finish.

Of the estate's pair, Pandesco is the delicate single variety; Cabianca is the one built for the whole meal. It cooks, dresses, and finishes without asking for attention.
