A Sunday sauce is the most repeated ritual in Italian cooking, and this box carries the whole of it — including an argument. Inside are both schools of the tomato: Campania's certified San Marzano, and Puglia's hand-peeled Spyro, sweeter and newer. Cook them a week apart and the difference is dinner-table conversation for a month.

The method never changes: tomatoes crushed into warm oil, left to go quiet, the spaghetti finished in the pan, a thread of Coratina at the end.
